From Cantonese Cooking to the American Takeout Menu
Beef & Broccoli as Americans know it is a classic example of Chinese-American cuisine adapting traditional Chinese cooking techniques to ingredients readily available in the United States.
Its roots can be traced to Cantonese-style stir-frying, where thinly sliced beef is quickly cooked over intense heat with vegetables and a savory sauce. In southern China, however, the vegetable paired with beef was more likely to be Chinese broccoli, or gai lan (芥蘭)—a leafy green with thick stems and a slightly bitter flavor.
When Chinese immigrants established restaurants throughout the United States, cooks adapted their recipes to locally available produce. Western broccoli, already familiar to American diners and widely available, became a natural substitute for gai lan.
The combination proved remarkably successful. Tender beef, crisp green broccoli, and a savory brown sauce offered the flavors and wok-cooking techniques of Cantonese cuisine in a form that became instantly approachable to American customers.
By the second half of the 20th century, Beef & Broccoli had become a fixture of Chinese-American restaurants and New York neighborhood takeout menus, eventually becoming one of the cuisine's most recognizable dishes.
