From Southern China to the Streets of New York
The story of Lo Mein begins in southern China. Its name comes from the Cantonese lou mein (撈麵), commonly translated as “tossed noodles.” Rather than describing one specific recipe, the name originally referred to the technique of cooking noodles and then tossing them together with sauce and other ingredients.
When waves of Chinese immigrants—many from Cantonese-speaking regions of southern China—arrived in the United States during the 19th and early 20th centuries, they brought their cooking traditions with them. Chinese restaurants began adapting familiar dishes to the ingredients, kitchens and customers they encountered in America.
Lo mein was a natural fit.
Over time, the American version developed its own identity: soft wheat noodles wok-tossed with savory sauce, vegetables and generous portions of meat. Beef became one of the most popular combinations, with thinly sliced pieces cooking quickly in the intense heat of the wok while absorbing the sauce surrounding the noodles.
A NEW YORK CHINESE TAKEOUT CLASSIC
In New York City, neighborhood Chinese restaurants helped turn Beef Lo Mein into something bigger than a noodle dish. It became part of the city's takeout culture—the kind of hot, satisfying meal packed into a container and carried home after a long day.
Generations of New Yorkers grew up ordering dishes like lo mein, fried rice, egg rolls and General Tso's Chicken from the Chinese restaurant around the corner. That uniquely Chinese-American food tradition became a cuisine of its own, shaped by Chinese cooking techniques and the neighborhoods where immigrant restaurateurs built their businesses.
