The Story Behind Char Siu
Char Siu (叉燒) is one of the most recognizable preparations in Cantonese cuisine, originating in southern China and becoming a cornerstone of Cantonese barbecue, known collectively as siu mei.
The name Char Siu translates roughly to “fork roasted,” referring to the traditional method of skewering seasoned cuts of meat on long forks and roasting them over an open fire or inside a specialized oven.
Traditional Char Siu is most closely associated with pork, which is marinated in a flavorful combination of ingredients such as soy sauce, fermented sauces, sugar or honey, and aromatic Chinese spices. As the meat roasts, the sugars caramelize, producing the distinctive glossy, deeply colored exterior and balance of sweet, salty, and savory flavors.
Char Siu eventually became an essential part of Cantonese food culture, appearing everywhere from neighborhood barbecue shops to rice and noodle dishes across Hong Kong, Guangdong, and Chinese communities around the world.
