From Chinese Cooking to an Indo-Chinese Icon
Chili Chicken has a different story from many traditional Chinese dishes. The version widely known today is one of the defining dishes of Indo-Chinese cuisine—a culinary tradition born from the meeting of Chinese and Indian food cultures.
Its roots are closely connected to Kolkata, where Chinese immigrants—particularly communities with roots in southern China—settled beginning in the late 18th century. Over generations, Chinese cooking techniques and ingredients encountered the stronger chilies, spices, and flavor preferences of India.
A new cuisine gradually emerged. Chinese techniques such as wok cooking, frying, and sauce-based stir-fries were combined with ingredients and flavors popular in India, including fresh green chilies, onions, peppers, garlic, and intensely seasoned sauces.
Chili Chicken became one of the cuisine's signature creations: crispy chicken tossed over high heat with peppers, onions, chilies, and a savory sauce. It captured the wok-fired character of Chinese cooking while embracing India's love of bold spice and heat.
Today, Chili Chicken can be found everywhere from Kolkata's historic Chinese restaurants to Indo-Chinese restaurants around the world.
