From Hunan to New York

The story of General Tso’s Chicken stretches across China, Taiwan, and New York City.

The dish takes its name from Zuo Zongtang (1812–1885), also known as General Tso, a celebrated Qing Dynasty military leader from China’s Hunan province. Despite the name, there is no evidence that General Tso ever ate—or even knew of—the chicken dish that would eventually carry his name.

The dish itself is closely associated with Peng Chang-kuei, a Hunan-born chef who left mainland China for Taiwan following the Chinese Civil War. In Taiwan, Peng developed an early version inspired by the powerful flavors of Hunan cooking. His original preparation was described as hot, sour, salty, and intensely savory, rather than the sweeter version familiar to Americans today.

The next chapter unfolded in New York City during the 1970s. Chinese chefs began adapting the dish for American diners, creating crispier chicken and adding more sweetness to the sauce. Peng himself later opened a restaurant in New York, and General Tso’s continued to evolve.

Over time, that New York interpretation—crispy fried chicken coated in a sticky, sweet, tangy, and mildly spicy sauce—spread from neighborhood Chinese restaurants across the country.

What began with the flavors of Hunan, evolved in Taiwan, and found its modern identity in New York became one of the most iconic dishes in Chinese-American cuisine.
