Korean Tradition Meets Modern Comfort Food
At the heart of this dish is gochujang (고추장), Korea's iconic fermented red chili paste. Made traditionally from red chili powder, fermented soybean, glutinous rice, and salt, gochujang has been an important part of Korean cooking for centuries.
Unlike a simple hot sauce, gochujang develops its character through fermentation, creating layers of chili heat, subtle sweetness, savory depth, and unmistakable umami. It became one of the foundational jang—or fermented sauces and pastes—used throughout Korean cuisine.
Noodles also hold an important place in Korean food culture. Known broadly as guksu (국수), noodle dishes have historically appeared everywhere from everyday meals to important celebrations, where their long strands have traditionally carried associations with longevity and long life.
Our dish takes those traditions in a modern direction. Gochujang is blended with butter to create a silky, spicy-sweet sauce that coats every strand of noodle, while pan-fried dumplings add a crisp, savory contrast.
The result is not meant to recreate one historic Korean recipe. It's a modern Korean-inspired comfort dish built from traditional flavors: chewy noodles, fermented chili, rich butter, and golden dumplings brought together in one bold, satisfying plate.
