From the Ancient Silk Road to Xi’an

The combination of lamb, cumin, chilies, and noodles has deep roots in the cooking of northwestern China, particularly Shaanxi and the historic city of Xi’an.

For centuries, Xi’an—historically known as Chang’an—stood at the eastern end of the Silk Road, connecting China with Central Asia, the Middle East, and cultures far beyond. That exchange left a lasting mark on the region's food.

Lamb and mutton became especially important in northwestern Chinese cooking, influenced in part by the region's large Hui Muslim communities and centuries of interaction with Central Asian cultures. Aromatic cumin, known in Chinese as ziran (孜然), became a natural partner for lamb, adding the warm, earthy fragrance now associated with many dishes from the region.

Xi’an is equally famous for its noodles. Shaanxi cuisine features substantial, often hand-pulled or hand-stretched wheat noodles designed to hold up to intensely seasoned meats, chili oil, garlic, vinegar, and spices.
