Inspired by the Flavors of Northwestern China

Cumin-forward cooking is closely associated with northwestern China, where Chinese culinary traditions have long intersected with the food cultures of Central Asia.

The spice is especially prominent in Xinjiang cuisine, where cumin—ziran (孜然) in Chinese—is famously paired with grilled and roasted meats. It is also widely found in the cooking of Xi’an and Shaanxi, regions shaped by centuries of trade and cultural exchange along the historic Silk Road.

Traditionally, cumin is toasted or cooked at high heat to release its intensely fragrant, earthy character. Combined with dried chilies and other spices, it creates the distinctive savory, smoky and slightly fiery seasoning commonly found on skewered and grilled meats throughout northwestern China.
